It is a recommendation from a trusted source, as local as it can get. The butchers work their magic in an open space on the ground floor, while the upper floor houses a restaurant complete with exhaust fans at every table. The grill is so aromatic, they will also offer you plastic bags to seal your outer layers in so you don’t walk out after dinner in a jacket smelling like grilled meat!
You must try the marinated prime rib or the tenderloin just with salt. And watch others make ssam - pick a leaf of choice, place your meat along with some pickled or lightly dressed garlic shoots or shredded radish on it, and try it two ways: once with and once without the spicy Korean bean paste.
And don't forget to order nengmyun at the end, a bowl of cold buckwheat noodles in a chilled broth. Here the broth is chilled to perfection, practically frozen, it reminds you of that perfect martini the bartender serves with broken bits of chipped ice flakes floating in the coupe.
