We were looking for a late night bite in Madrid - which normally isn't so difficult but it was midnight after all - and saw some bistro lights on a small street behind the main drag, Calle Goya.
When we poked our heads in the server was tentative, looking at his watch, but the chef / owner behind the butcher counter waved us in with a big welcoming grin. And we were in for a treat as well as a tip for two fabulous restaurants in Shanghai.
The chef and owner Jaime introduced himself as a Distributor-Seeker-Cooker-Restaurateur of Meat and Oysters (only French and CA Kumamoto though), and you could feel his passion with every hand gesture. His wine list is not too shabby either, and we thoroughly enjoyed the glass of Tempranillo red that was recommended by our server.
We were lucky to find him here, he has two restaurants in Madrid and two more in Shanghai, indeed a growing empire, he's not always easy to pin down.
But we now have his contact and look forward to following him around the world.
