We are a bit high brow when it comes to ramen, and most ramen shops in NYC don't make the cut. They are mostly fun places for students - for an inexpensive meal with some beer - not for connoisseurs of the delicate yet dense noodles and perfectly light-rich broth.
So when the most conscientious, diligent, kind and passionate chef from Japan opened up a Misoya in our neighbourhood, we went several times a week and brought friends each time to spread the word.
And when we go now we recognise the regulars. All discerning palates who've lived in Japan as expats or otherwise were in the know.
Misoya is a franchise operation straight from Japan. So while there is foundational authenticity and consistency in the menu, the quality and experience may vary some depending on the chef/owner. There are two locations in NYC, but we believe the West Village location pinned below is the place to be.
