The House of the Singapore Sling. The Raffles Hotel in Singapore is the utmost when it comes to extravagant, yet elegant, colonial luxury. Its rich chocolate wood and pristine white marble contrast of the grand lobby whisks you right back to the olden days of slow glam and sultry glow, of evenings gently filled with clinking glass and melting ice in cut glass crystals. You imagine the heat of the day draped over by the awning in the courtyard, gently blending into an evening of big band music, gay laughter and fancily-dressed society. A ball.
The Singapore Sling, a rosy cocktail still served at the Long Bar, located at Cad's Alley back in the day, to me, is the cocktail with our most favourite story. When etiquette dictated that ladies could not drink alcohol in public, the clever (and feminist!) bartender Ngiam Tong Boon created a cocktail that looked like fruit juice but was actually heavily spiked with gin - a clear liquor - making it socially acceptable for women to drink. A reverse mocktail, so to speak.
And even today, you can indulge in the practice of sweeping peanut shells off the tables and bar counter onto the floor at the Long Bar.
