Segovia, Spain, is known for its roast suckling pig, or cochinillo.

But if you eat pork and are in Segovia, we urge you to give this dish a try.
We tasted cochinillo at Restaurante Jose Maria, an eatery that's touristy certain hours of the day but still a local favourite during late afternoon lunch, say 2:30 to 5:30 pm or after 10 pm - when the Spaniards dine.
But no matter your dining time, watch as a waiter brings out a full pig, places it on a trolly, and then cuts it into six pieces with the simple slam of a porcelain plate.
You will then be served one of the portions with some savory aus jus.
The pig's skin is crispy; the meat is juicy and full of farm-to-table flavor.
And as you appreciate the pure taste of pig, you may smile at your loved one, and think back to one of your child cartoons before saying to yourself, "That's all folks!"
