Pisco, a liquor made from fermented grapes, is the star of the pisco sour, a frothy cocktail that's delighted drinkers since first being served in Lima, Peru, in the early 1900s.
If you'd like to try your hand at making the cooling concoction at home, here's a recipe from pisco producer Macchu Pisco.
INGREDIENTS
1 egg white
3 ounces pisco
1 ounce simple syrup
1 ounce fresh lemon juice
Bitters
ASSEMBLY
In cocktail shaker filled with ice, combine egg white, pisco, simple syrup, and lemon juice.
Cover, shake vigorously for 15 seconds, and strain into six-ounce cocktail glass, top with a few drops of bitters.
