In addition to having establishments in nine cities declared UNESCO World Heritage Sites, more than half of the hotels in the Parador network are located in monumental environments, and many others allow accommodation (and parking) inside national parks and restricted city centers.
Rooms are large and spacious - no boutique hotel situation going on here - and the formal dining options all present exquisite local fare. Leg of goat I had at the Parador Malaga Golf still counts as one of the best dishes I've ever had.
Do I have a favorite? I love them all. But my favourite moments?
- Looking down on Toledo from my own private veranda at Parador de Toledo with a bottle of Spanish local red wine and a tin of boquerones (image above)
- Walking through the private courtyards late night and hearing the fountains drip drop at Parador Santiago de Compostela
- Sitting in the castle lounge taking a conference all at Parador de Caceres
- The gorgeous beach cliff resort of Parador Aiguablava with a pool overlooking the crystal blue waters of Costa Brava
