Make sure you give yourself ample time. Lines are long, patrons have conversations with the vendors including sharing recipes, and you have to stand in line afresh at each stall. Which is the joy of it all!
In terms of seafood, go to Pescaderias Ricardo. We've tried and swoon over their tuna. And it was an inside tip, the chef at one of the best seafood restaurants in Sancti Petri told us she shops there.
Not in the market, but across the street is also the salt museum where you can buy amazing flakes of salt harvested from the local salinas. The flakes are so large. You have to crumble it on top of your food as finishing salt. It magically enhances your food without tasting salty!
