This was my first meal in Mexico City and, as I later told all my friends, the best meal I ever had in North America my entire life up to that point.
It is also where I ventured to try the Mexican delicacy - aka Mexican truffles - called huitlacoche. Quite unattractively translated as corn smut in the US, I absolutely loved the delicate, sweet corn-y mushroom smeared on a tortilla. It is a funghi after all.
This is also where I learned of the bandera.
I spotted two elegant gentlemen wearing tailored suits and shirts with beautiful cufflinks with three slender little shot glasses in front of them, alternately sipping them and then being topped off when the liquid levels got low. I found out this flight of drinks was called the bandera, literally, the flag. It is a flight of your choice of clear liquor (usually tequila), along with lime juice and a very light tomato juice, almost like a clamato. Red, White and Green, hence, the Mexican flag.
You will be shocked how well a little sip of tequila goes with alternative sips of the two different chasers. I vow to replicate that experience with my guests at home.
